Guinness Cake

225gms margarine 225gms brown sugar

3 eggs lightly beaten 275gms plain flour

2 level teaspoons mixed spice 225gms raisins

225gms sultanas 100gms mixed peel

100gms chopped walnuts 8-12 tablespoons Guinness

  • Cream margarine and sugar until light and creamy

  • Gradually beat the eggs into mixture

  • Fold in flour and mixed spice

  • Add raisins, sultanas, mixed peel and walnuts, mix well

  • Stir in 4 tablespoons of Guinness, mix well to a dropping consistency.

  • Turn into a lined 18cm cake tin

  • Bake in a moderate oven 160 oC for 1 hour then reduce the heat to 150 oC for 1½ hours

  • Allow to cool before removing from tin

  • Prick the base of the cake with a skewer and spoon the remaining Guinness over the cake

  • Keep for a week before cutting



Soda Bread

475gms soda bread flour

65gms sugar

1teaspoon salt

1 medium egg lightly beaten

450 ml buttermilk

  • Preheat oven to 160 oC

  • Grease a 2lb loaf tin

  • Mix flour, sugar and salt together

  • Blend the egg and buttermilk together

  • Add to the flour mixture and stir to a soft dough

  • Put the mixture onto a floured board and knead very lightly

  • Shape into a loaf and put into tin

  • Bake for approximately 45 minutes or until a skewer inserted into the bread comes out clean

  • The base of the loaf should sound hallow when tapped

  • Turn onto a wire rack to cool



Wheaten Bread

250gms soda bread flour

250gms wheatmeal flour

65gms sugar

1teaspoon salt

1 medium egg lightly beaten

450 ml buttermilk

  • Preheat oven to 160 oC

  • Grease a 2lb loaf tin

  • Mix flours, sugar and salt together

  • Blend the egg and buttermilk together

  • Add to the flour mixture and stir to a soft dough

  • Put the mixture onto a floured board and knead very lightly

  • Shape into a loaf and put into tin

  • Bake for approximately 45 minutes or until a skewer inserted into the bread comes out clean

  • The base of the loaf should sound hallow when tapped

  • Turn onto a wire rack to cool




Potato Bread (Fadge)

450gms mashed potatoes

100gms flour

½ teaspoon salt

25gms melted butter

  • Potatoes are best used when still hot

  • Put the mashed potatoes onto a floured board

  • Sprinkle with salt and melted butter

  • Knead just enough flour into potato mixture to bind the potatoes together (too much flour toughens the bread )

  • Roll out to about 5mm

  • Cut into round or triangle shapes as desired

  • Bake on a hot griddle or heavy pan until browned on both sides

  • Spread onto a tea towel to cool.

  • These may be cold, or hot with butter, or fried in bacon fat and served with eggs and sausages.




Oat cakes

125gms of oatmeal (plus extra for kneading)

½ teaspoon baking soda

Pinch of salt

2 teaspoons melted fat

1 tablespoon hot water

  • Heat oven to 190 oC

  • Mix oatmeal, baking soda and salt in a large bowl

  • Drizzle in the melted fat and stir to a hard paste

  • Cut the paste into 2 small balls

  • Sprinkle a baking board with oatmeal

  • Roll each ball in the oatmeal to prevent sticking

  • Knead each ball for a few minutes until it dries slightly and stops sticking to the surface

  • Roll each ball to5mm and cut into quarters

  • Place on a greased baking sheet and bake for 30 minutes or until brown at the edges
